Are guppies okay to be mixed with angelfish?

While the angels are still young it would be possible. Once the angels reach max size the guppies may become treats.

In a 30 gallon tank. I saw in a couple of places that they would be fine together so I bought two, and then I saw that the angels would eat them in another. How long does it take an angel to grow large enough to eat a guppy?

About a year...two at the most. Mine grew from a 2" youth to the size of my hand in about a year and a half.

I have two guppies in my tank and I have since added angles (both fairly small) and there hasn't been any problems. We'll see how it goes when the angles are full grown.
