fish can exhibit a large variety of symptoms before death, so that is a bit of a broad question...fish who are dying from a resiratory poison (ammonia, nitrites, etc...) usually gasp at the surface or lie close to the bottom, and don't show much interest in food. Examination of deceased fish will show discoloration in the gills.
