So many issues with Nitrate test results...

Notice the difference in expiration dates on the two bottles...very common even if from the same test kit.

I also suggest you rinse your tubes with DI water after and before use. Not your tap water.

I am really wondering what the alternatives are here, or 8f not testing would be the answer.

I hear you on the nitrate test. I've seen commercial duty test strips available mail-order and ~$400+ meters that measure for nitrates in PPM. Dunno if the red sea (brand?) kit works for freshwater.

IMO, with a color chart or test strip, it's only intended to get you "close". More of a go, no-go gauge. Test strips should actually be more foolproof for this application.

How often do you guys measure for NO3? In my setups, I might do it 1-2x per year? A new setup is a different story of course.
 
A well established tank with a solid WC routine? Twice a year, before and after a water change. I am more likely to check my tap as the seasons change every three months. OCD on new set ups.

Though a disclaimer needs to be tossed in if increasing the bio-load or feeding habits.
