I've been looking at one of my fish and it almost seems like it has cataracts on it's eyes. It does fine in the tank and still eats, but I have no idea if it's possible for them to get them or not.

Yes it is possible for fish to get them. What type of fish is it? If it is a nocturnal fish you are just seeing the reflective membrane.
The fish are Green Severums, not sure how old they are since I've only had them for about 3 years.
