chocolate cichlids: tankmates,proper food & behavior advice needed!

I recently purchased a 5" chocolate cichlid and he is by himself with a 5 inch sailfin pleco in a 60 gallon tank. He seems very timid and from research Ive done, hes supposed to like looking upward as if looking for insects to land on the water.
Ive had him a week, and I read that tetras were a good dither fish to add to a chocolates tank, so I added four. I have not seen the chocolate eat, its worrying me. My ph, nitrite, nitrate, hardness, and aklaline levels are all fine... He seems to like hiding, so I rearranged the rocks and plants to where he had less hiding spots and he seems more active/happy. He doesnt seem to like me at all, if I sneak up to the tank I can view him swimming happily, but when he notices me, he ducks for cover. Is this normal? Anyone have any advice?
 
I bought a polleni 2 weeks ago and he's only just recently started to hang out in the open. He spent about a week hiding in a corner and not eating, but now is eating and seems much more relaxed. So I wouldn't worry too much yet -- just give him some time.

What kind of tetras did you add? What else do you plan to add?
 
Chocolates are mostly pretty mellow, low-maintenance types. What sort of surroundings does the tank have? Is it out in the open or tucked away somewhere? Does it have a background? Like Joel suggested, maybe just wait a bit for him to get comfortable. You might also try to just quietly "hang out" by the tank so that he gets used to seeing you. No sudden movements.
 
Heres what I kept with mine : Santanoperca. leucosticta , Geophagus brasilnellis, severums...
Usually geos, eartheaters, sevs, uarus, and other peacuful cichlids work great.
