Crawfish turned black?

So around the end of May we had a crawfish boil. They were sooo cheap then, I mean, it was crazy! So anyway, before we boiled my brother and I had some fun and tried to see what our animals thought of them. Well, in the process we dumped a bunch out, because, well, they were cheap. So after we were done we kept finding more and more of these crawfish that had hidden from the dogs so we took some down and put them near the pond in the pasture, cause there are always crawfish holes in that pasture, I figure they might have a chance.
So we got back and realized that we missed one. My brother was about to put it in the sink for some reason when I decided I'd put it in my 10gal instead. I had 3 guppies and a beta in there, but it had fairly small pinchers and I figured they were fast enough to get away. Needless to say only one of the guppies survived and the beta's tail got torn to shreds, so now the crawfish is in the 10 gallon all by itself.
Well, it's just been getting blacker and blacker. I didn't know what to feed it, I threw some cat food in there for it the first couple days and then I went out of town and mom started feeding it meat and such. It's been happy and healthy and doing fine, getting braver and braver and constantly rearranging my plants to build little hidy places. It has lots of places to hide, and there's rarely anyone in that room anyway, so he's pretty chill.
But he's gotten just blacker and blacker! I don't know what the deal is, whether it's his diet or what? I did have a fish turn absolutely white in that tank before since it didn't get much sunlight, but now it's on the desk near the window so it should be seeing more light. What causes this?

Not sure about him turning black but I do suggest adding more veggies to his diet. Algae wafers, blanched zucchini and carrots are good choices.
