It said here that "if in a pair, they'll swim together"... didn't mention anything about constantly nipping and fighting... wtf???

Did you buy them from LiveAquaria? If you did you'll notice that it says:

Dwarf Gourami - Male $ 5.99

There's no price for a female, so you've bought 2 males. When something lists "in a pair" or "as a pair" they always mean 1 male and 1 female.
