Fast rise yeast incorrect for DIY CO2 ?

This is for my 10g planted. DIY CO2 started about 1 week ago.

2c granulated sugar
1 tsp baking soda
1/8 tsp fast rise instant yeast
room temp water

For a week, I can see action in my juice bottle but nothing was bubbling in the tank (air stone below a bell) unless I shake the bottle. Checked no leaks at any of the connections.

All of a sudden, last night, it started bubbling like crazy (~ 5 bubbles/sec). This is too fast for the bell to contain. Is this because I'm using the wrong kind of yeast ? Do you only find wine yeast at wine stores ? Is it just plain old regular yeast I should be using ?

Me so far:
1/2gal milk jug, #7 rubber stopper, airline tubing, good airstone located at the base of my Whisper in-tank filter, DI water to ~1" below handle's bottom, ~1/2C granulated sugar, ~1/2 tsp Fleischmann's active dry yeast (for baking, 3 pack).

Result: 2 weeks continuous tiny bubbles caught in the filter's downdraft.

My younger daughter & I are going to do a designed mixture experiment to optimize water, sugar, yeast ratios for total output and/or duration, then we'll try the best mix w/ different brands/types of yeast.
