Someone already asked this, but let us know more about your water change, tank cleaning, and any filter cleaning you do. If you change the filter pads you could be throwing away beneficial bacteria and starting a tank cycle. Also is there any thing that might disturb the tank?
Fish can acclimate to a variety of ph values. As long as its stable they should be ok. The best thing you can do is keep it as close to tap as possible with 25% weekly water changes.
A long time ago, I had a Penguin 125 filtering a 20g tank. Every time I replaced the filter the ammonia and nitrite would spike. I only had one oscar & he survived the Penguin, but less hardy fish may not be able to handle the monthly spikes. This is why people are asking about your filtering/ water changing practices. If you ever add water (from evaporation, etc.) and the water isn't properly dechlorinated, you could have ammonia and nitrite spikes also.
December to present isn't a really long time for a tank to establish itself if something like in the above paragraph is happening. Get your own test kits and monitor the day after you change filter media.
it is also a good idea to test everyday, or every other day when weird things are going. You might be having small chem spikes that the pet store wouldn't always fine. If things do settle down for your tank, then you can test less often.
