I’ve had a 210G for a few years now being filtered by 3* Rena XP3 filters. Cleaning 3 canisters regularly can be a quite a bit of work and quite messy sometimes so I have been looking at some other options. Can anyone recommend a higher capacity canister that would allow me to run just 1 unit? Could I use a pond filter?

Maybe a large wet/dry sump?

while it would certainly be easier to run just one filter, it would be risky if that one failed for any reason - power outage and trouble restarting, clog, other mechanical failure, etc. . . ). running multiple filters allows for some room for error if one of them breaks. the other two pick up the slack or at least minimize the damage from loss of filtration.

I agree 100%. It is always better to have more then one filter running on any system if possible for reasons already stated.

1 Sump, 2 return pumps, 2 drain lines (both of wich should be able to handle the full flow of both the returns).

The actual tank used for the sump and the wet/dry chamber do not present enough of a risk for even the most worried people to be concerned of thier failing.
