Hello all,

I am about to post up a new menu for my shop here but thought I would drop a thread to get some thought from those of you that would be either secondary school or post secondary school about what kinds of food items you would be looking for.

I am located on a University Campus and have a seating area of approx 20 seats.

Going to set up the new menu this weekend will post up a before and and after of what I put up.

Name of the restaurant is All Souped Up and the focale point is healthy food.

Looking forward to some thoughts from you guys.

Beef/barley/mushroom....my favorite soup!!!

Oh and how about some nice wholegrain corn bread as an offering with the soup?

This is the start of year 4 here for me and it is refreshing because Aramark was the corporate foodservice provider here and they did their very best to basically run me out of dodge as it were. Yet, they got kicked out because they had very sub par service and food quality.

So long story short the previous 3 years there was a unwritten nuance that was shot my way that I best not do anything they had on their menu's otherwise they would be less than impressed.

Yet, here we are with the new guys Chartwells(Compass Group) having come on June 1 and since I have 3 years seniority here I am now free and clear to do whatever I want.

When I put the new menu up, I am going to start a thread where I take suggestions from people and incorporate them into what I actually do here.

I started off the year pretty well. The one thing that many restaurants dread came about June 7/11. Mr health inspector strolled on in for a pop inspection. I got a 100% no red flag all is good report from him. I love it when they come by as it is then that the microscope comes out. I like it even better that the reports are going to be freely available for anyone to look at so that you can see what really goes down in your favorite place to eat.

What do you mean by fat sandwiches?

For soup today I did a organic basil herbed lemon broc and potato. It would have been vegan but I added a touch of cream to cut the bitterness of the lemon.

The most popular thing in the cafe in our library, is the Expresso machine. 2nd would be the coffee urns.

The ideal food is something that will sate a 19 year old woman, and yet satisfy a 19 year old male.
Are there any/many shops selling middle eastern food?

I would suggest trying home made rice crispies threats, with and without chocolate on top, and home made peanut butter with chocolate on top.

A fat sandwich is a sub filled with anything and everything that can clog your arteries. There are many different kinds, but the most famous is the Fat Darrell (if you can eat 5 within a certain time limit you get a sandwich named after you).

Honestly I've only had this a handful of times, reserving them as a celebration for after finals. They're great and not as greasy as you might think they'd be, but I'd only have them once or twice a year. Unfortunately some students would have them a couple times a week.

That is disgusting, I'm sorry. I could never be stoned or drunk enough to enjoy that!

I have the opposite experience to report. I live near the University of Florida in Gainesville and there are many more vegetarian, healthy options in that town than in mine (Ocala). While we have a couple of great Indian restaurants, there is no "health food restaurant" here other than the deli at the health food store.

College towns may be full of frat boys with the munchies, but I imagine they are also full of well off, better educated people (since the strongest links to obesity are poverty and lack of education) and health conscious people too.

The menu at places like Applebee's is discouraging if you are a vegetarian, other than salads I believe there is a flatbread pizza appetizer, and that's it. I avoid chains, unless I just want fries and cocktails...or if I'm happy enough with a veggie burger or salad, baked potato, etc.

Vegetarians, people on a diet or who favor a healthy lifestyle, as well as foodies and adventurous eaters will probably love your restaurant, Chef :)

That most definitely lives up to the name FAT sandwich.

About 12 years ago, I made the decision to walk away from deep fry cooking as a general rule. I have spent a long time studying this and have found out some very insane things about fast food. Although if the oil is not scorched or allowed to be over used those dangers are almost non existant. It is when the oil is heated to high to make cooking times shorter and allowed to be used past acceptable timeframes that things get harmful.

While the video was pretty entertaining, I could not sell my soul as a chef to put forth such a thing as a menu item. Although I could do a killer variation of it as a more healthy formated chicken parmigianna.

I think I will call it The Phat Eddy :headbang2: (Pretty Hot And Tempting=PHAT)

I have been the corporate food provider for The Canadian Cancer Societies event Relay For Life here in Regina and have tailored my style of chefing to be more health concious as well as health enabling.

This being said, the video did give me a few ideas of a twist on that which I could do. I am thankful to anyone who has put up an idea or will put up an idea, because for some reason the people here when asked for suggestions or ideas simply give me a deer in the headlights look and say that menu looks good to me. Which is why I decided to drop down this thread.

One of the reasons why I dropped so many fish tanks in here is not just for the peace and tranquility that they put forth as people sit and watch them. I also put them in here as a sales vehicle to help enhance a seafood/fish based menu proffering.

I will do the beef/barley/mushroom soup tomorrow.
