Peppermint shrimp molted with eggs..

I got my peppermint shrimp 1.5 to 2 weeks ago.. tonight, I came home to discover that he molted.. and now, I have two questions.. Does he eat the molted exoskeleton or do I need to remove it? Also, I noticed that he is now carrying eggs.. it is my understanding that they are hermaphroditic, so that is why I'm still referring to it as "he." Anyway, I'm not sure if I just hadn't noticed the eggs before or if they are just new. They are green. He is the only shrimp in the tank. The eggs are infertile, right?
 
Okay, so now the eggs are gone.. I know I'm not crazy.. where'd they go? Why would I see eggs for only one day? I don't see any little fry around the tank.. and the only other inhabitants are a hermit crab and a margarita snail..
