Problems with fishless cycle?

I am wondering why I am not reading any nitrites in my fishless cycle? It has been 11 days since I first started it. I got the ammonia up to 5ppm on the 4th day. I was adding the same amount that got me to that level up until 4 days ago, when I stopped adding ammonia all together. I wanted to see if the ammonia level would go down at all. Well I tested on day 8 and the ammonia read at 2.5ppm but still no nitrite. I tested a day after and the color on the chart looked like it was in between 1.0ppm and 2.5ppm, but no nitrite I just tested again today and the results are the same as on day 8. Why would I have a lower ammonia reading but no nitrite? I am confused.
 
Have you tested for nitrAtes? Do you have any plants in the tank?
 
No I have not test for nitrate, i did not think that there was a need for it. I have no plants in in tank it is a bare bottom tank without decorations. I am wondering if it beacause the temperature is on the low side, it started off at about 70 degrees now it has dropped to about 70.
