Excuse my ignorance, but what's the purpose of protein skimmers? How's it work, and what's it do? What applications require these, and what are some good brand name skimmers?

Protein Skimmers - Purpose?

Protein skimmers are primarily for saltwater tanks. They tend to have a layer of protein that forms on the water surface that prevents oxygen from mixing with the water. The protein skimmer removes this layer of protein to allow oxygen mixture. (Simple explanation anyway)
