a good hearty fish, doesn't need a lot of room, and doesn't need a school. can keep just one. anything?

Tons, how big is the tank? Cichlids come in every size imaginable, and will often do fine as the sole resident of a tank (depends on the fish). Gouramis are hearty, and do not need or in most cases want any company.

less than a gallon, no filter, will just swap out water when it starts gettin cloudy. i'm thinkin something small that stays small

This is just a humorous aside, but I learned on another site that a
lone fish like that is called a "water dog" as it's kinda like your pup.
Guess it works better with larger fish, but I had a betta who was my
"water dog" for years--knew me and knew his name, Phoenix!!! LOL
:dive2:

welp, i've got 2 small cory cats in there now braving it. they're refugees from my tank. we'll see how they do. they're in a small beta hex with a bit of gravel. seem to be adjusting ok, they're scrounging through the gravel like normal.
