Does anyone know which Aquatic plants suitable for Red-Ear sliders, like plants that they will not eat?

What size RES do you have? Plant material is part of an adults diet so pretty much no plant is safe from them. If you want to use plants then find species that grow fast to replace the ones that get eaten. I keep Anacharis with my turtles. They don't eat it too much but it's there if they want it and it grows fast.
The only thing mine is leaving alone right now is hornwort. I actually toss all my plant cuttings into the pond in the summertime to feed the koi and turtles.
