I believe the tail color is the only difference. Most people prefer the gold saum, judging the quality of the fish by the thickness of the gold or orange in the tail. The thicker and brighter, the better. You can help maximize the intensity of the orange color by feeding a color enhancing pellet food by Tetra Cichlid Color.

I kept a gold saum years ago. GTs didn't really interest me but I saw this gorgeous 2.5" specimen and just had to have it. I fed it Tetra DoroRed for its first feeding in the morning. I had to get rid of it because I ended up moving that year. I didn't keep him long enough to develop the head hump. I got rid of it when it was about 5".
 
I have never seen a white one here. All of them have orange tails. I saw a full grown gt and its colors almost knocked me to the ground. What a cool fish. I almost bought a baby one, but then I remembered they were not called green terrors for nothing, and decided I want the rest of my fish in my tank to live.
 
nah, its a dumb name they arent really that aggressive, unless you get an oddball. I have been told mostly that they arent that bad, just a few cases of hyper aggression. I want mine to get a lot bigger hopefully, he is only about 3 inches now.

I hardly see docile ones in the stores...but GT is a name which had been applied to Aequidens rivulatus, which is now relatively unknown to the hobby, as the area from whence it is collected is full of turmoil and not a great place to be!
