Looking to find advice on what fish to plant in my 20X20X23H tank. I was originally thinking live plants and rock cave system with a pleco, 6 peppered corys a group of glass cats, and a couple discus fish if possible. Would that be enough room for discus or would they need additional space? Any other stocking ideas are appreciated!

Yeah, I agree with Joel, no discus. How about a pair of honey gouramis instead or (less than great but ok) 1 angelfish? Make sure your pleco stays small, clown (hides a lot) or bristle nose (almost too big, but ok-ish).
I know by water volume your tanks "seems" bigger than it's surface area suggests but surface area is very important for fish stocking.
