I've been thinking about putting a betta with some plants in with 2 golden apple snails, 1 black mystery snail, 1 ivory mystery snail and 1 Colombian Ramshorn snail. Would this be acceptable in terms of stocking level? Would I be able to add more fishes, if I'm able to find fishes that he ignores (maybe some Neon Tetras)?

Before you decide to add other fishes, consider the bio-load of the snails. The rule of thumb (according to applesnail.net) is 2.5 gallons per snail. If you go by that rule, you should not add any additional fish.

While your current plan is a bit over that rule, I'd say you're fine (with regular water changes of course). It should turn out a nice tank.

Another concern with that stocking is that it is very very likely your snails will reproduce. (Golden, black and ivory are all the same species, so will have no trouble producing babies together.)

on the bright side, with the exception of the ramshorn snail, all the other snails will lay their egg pouches above the water line; making removal (if desired) easier.

good luck!
