the other option is to make that baffle on the right only 4-5" tall, enough to contain the sand bed (if applicable), then go all the way to the top with eggcrate. This will effectively include the fuge area in the "evaporation chamber" to lessen the effects of water loss in that chamber.

I agree on this one, yet another option is to have a the last right baffle raised 1/2"-1" and ditch the sand in the fuge area and put a sponge there across the width of the baffle to keep any debris from reaching the return pump. You risk running your fuge area dry, but you will have more room for evaporation.
Or you could just install a quality ATO system and not worry so much about evap...
