ooh yeah, water sprite is great for that. I have some that are nearly 3 feet tall! They're easy to care for and do fine in low light and no ferts.

hornwort and anachris are also capable of getting tall (gotta prune mine constantly to prevent them from hitting the canopy). don't know about wisteria, as I've never had any myself.

The java moss looks cool, but I read that it spreads out really quickly - how do you keep it from growing or cut it back when it gets too big?

you can keep it trimmed or when it just starts to bug you pull out the decor its on and attached to and remove it manually, not too bad.
