The way you are doing it is fine or you can use the drip acclimation process. I use this method to accimate my fish and since doing so my fish loss due to acclimation has dramatically been reduced. In order to do this float the bag in the aquarium for approx. 15 minutes. Then empty the bag and fish in the water that it is in into a bucket. Use a piece of airline tubing and put one end in the tank and the other end you start a syphon into the bucket where the fish are. Tie a knot in the airline tubing so there is only drops of water coming out of the tubing that has the syphon running. Let the tubing drip into the bucket with the fish so there is enough of the tank water in the bucket. I usually acclimate this way from 30-45 minutes. At the end of this time, you can stop the syphon from the tank and net the fish and place them in the aquarium. This will give the fish a chance to adjust to the tank conditions in thier new home drip by drip. They can adjust to PH, water temerature, and anything else in your water this way. I have had great success with this method.

I always net the fish out of the bag and throw out the fish store water. Too much risk of introducing undesirables...

You really do need an Ammonia kit of some sort, even if you can't get an Aquarium Pharm. kit. Any decent fish store should stock one. I can't imagine they aren't available in England. (Unless of course you guys have a different word for NH3+.)
