What are some good plants that will thrive with their roots fully submerged in water, yet grow above the water line?

Lucky Bamboo

another is Golden Pothos. Somebody here awhile back put them in AS the media in a couple of hob filters and trained the plants to grow up the wall behind the tank (held up with pushpins and string, nothing fancy). Quite lovely, readily available, little care required, save on filter media. Only concern is the plant uses a good deal of water so you may need to top off more frequently.

I agree with Xan, Pothos is an excellent plant. They do tend to use a lot of water though, as he said. I also *think* that they suck up nitrates.
