What to do about softened water?

The house where I'm living now has a Culligan water softener. It uses rock salt for the softening agent. Now, in reading the water chemistry posts and articles, I know that the water softener replaces the Mg and Ca ions in the water with Na. At least, I think I know that. Correct me if I'm wrong.

So if you have softened water, what do you do about it? The water softener has a bypass valve, but that's for the whole house. So I could switch the softener out, do the water change and then switch it back on. I'd think I'd have to purge the pipes to get the softened water out.

Also, doesn't the water softener add to the total dissolved solids in the water? I'm worried if I start a FW tank in this house (not my house) that I'll end up having to make water chemisty adjustments or constantly be switching the softener off. I'm thinking I need to hold off on getting my tank setup until I can change my living situation...
