I have a single betta and a few pond snails in a 10 gallon tank. The setup is about a month and a half old, and today, I noticed a small white worm, possibly with many legs but too small to see (the entire worm was maybe 4-5 mm long) wriggling against the glass.

What should I be watching for, to see what this might be? (And why hasn't the betta eaten him, anyway? :) )

if it has legs, then it most likely is not a worm.

hard to say what it is without a picture.
