Do you HAVE to have around 1 pound of LR per gallon?
Or could you just have..say, 5 pounds in a 75g tank? Just in one spot?

From what I've been able to gather lurking around here, To gain the benefits from the live rock, (natural filtration, aiding in cycling, etc,), you won't get those with such a small amount.

The 1 - 1.5 lb / gallon is to have effective biofiltration. You could have less, but have to rely more heavily on other filtraion methods. In a fish only tank, you could get away with no LR at all, but would have to rely heavily on a wet/dry, canister, or other power filter for filtration. In a reef tank, it would be realy difficult to maintain a successful reef without an adequate amount of LR (and much more expensive to maintain vs. having the LR).

Nice answer. I agree. Liverock also provides some important organisms that act as food for certain inverts and fish.

up i agree with them it only really needed when relying on it as filtration...but it really does benefit.

You can go with a smaller amount of live rock (let's say 15 pounds for a 75), then add dead rock to that to get to the 1+ pounds per gallon, wich will eventually become live.
