big fish in big tanks with no gravel

half the aquariums in the galleries of places like Arofanatics
have no gravel at all in them. many with no plants or rocks either. why are they doing this?

is it just for ease of siphoning aro poop?

the only way this makes sense to me is if they have a huge sump/ refugium doing all the good bacteria business.
 
You're right in how that makes little sense for the purposes of surface area with regard to nitrifying bacteria, but these tanks probably have tremendous filtration...maybe even fluidized bed-type filters.

It is much easier to siphon poop in something like that, so that would be my guess as to why it is convenient.
