Would a aquaclear 500 and emperor 400 be enough filtration for a 100 gallon tank?

Yes, those 2 filters in tandem will do a wonderful job. What type of fish are you planning to keep? If you are keeping cichlids or goldfish, or really messy fish, you may want to add another filter.
