I would like to set up a 125 gallon tank sometime this summer and I was wondering if you could recommend a very interesting out of the ordinary fish for it. Thanks.

Are you looking for just one or two fish, or a community. If a community, I would go for a large exotic pleco, like a Goldy, L-14 (My favorite). These would definately make for a great center piece fish.

maybe a freshwater stingray.
I doubt that a standard 125 is big enough for stingrays,I would go for
1 tire track eel
2-3 bichirs
1 mango plec
1 siamese tiger
Thats a tricontinental mix but it should work and the fish shouldnt get too big for the tank either, As you see how the fish settle you may even be able to add more fish. Im setting up a 125-150 this summer too and the inhabitants i plan on having will be
2 tire track eels
1 rusty plec
7-8 pim pictus catfish
1 black ghost
and 10 or so large rainbows, The black ghost may eventualy need a bigger tank but they grow slowly and he will be fine in there for atleast two or three years as hes only two inches right now. I already have all of these fish in smaller tanks and i may have chosen differently if i didnt already have them but i feel this settup will give me enough activity (pictus are very active and believe it or not but my ghost and eels are very active as well) excitement (these fish will all gladly gobble down some white clouds or danios) and oddity. The fish will also all get along just fine.
Another cool settup would be a biotype or a river or lake system, A biotype is a settup thats settup to mirror a specific geographical region and that has fish that are all found in the same region, a neat settup would be a smaller south american pim biotype featuring the ornate pim the pictus cat and whatever other fish you would like to incorperate from that particular region. Good luck and im sorry to have babble so long.
