My setup is going to be:
55 gallon tank
3" DSB ( do i need to go to 4" )
30 lbs base rock
45 lbs fiji live rock
AquaC Remora protein skimmer w/ MaxiJet 1200
250w Titanium heater
2 MaxiJet 1200 Powerheads

This will be a FOWLR at first until about 6 -12 months later then i will turn it into a reef tank.

Questions are is this setup going to be good or do i need to change anything.

The guy at the LFS says i need only about 2" of sand and i don't need the 2 MaxiJets, that it is to much water flow.

As this is my first saltwater tank any help would be greatly appreciated. Thanks

3" is the minimum. 4" just reduces the chances that any sandsifters you have will sift the sand so much as to reduce your sand bed's ability to control nitrates.

You should have enough live rock, as long as your tank isn't too heavily stocked.

Your LFS is thoroughly wrong on both counts. 2" is insufficient sand to seriously reduce nitrates, which is the point of a DSB. There is almost no such thing as too much water flow. Real reefs get currents much stronger than you will be creating. 2 mj 1200's will only cycle 10.7 times per gallon. 8 times per gallon is considered quite low current flow in a reef tank. 10 times per gallon or more is starting to get more towards the moderate flow category.
