HELP QUICK! - Iridescent shark in a headstand

This just started last night. I have had my shark for 1 week today. I looked over & noticed that he was in a semi-headstand & got worried. I checked my pH and ammonia. ammonia at 0. good. pH was super low. around 5. I quickly did a partial water change & added some pH riser to achieve a stable level. None of my other fish seemed affected. Now it's normal, and he's still acting strange. Still in a headstand (not complete vertical) and possibly a little bit to his side, unless someone bothers him & he swims away. Advice?
 
i do check it regularly, however have not lately, because i've been super busy with work. I have no clue why it's so low. I only have ceramic ornaments & 2 fake plants. no drift wood. My pH out of the tap is pretty high (7+). Could the water conditioner (Stress Coat) be bringing the pH down?
 
If you are trying to get the pH back to a regular level, don't do it any faster than about .5 every 24 hours or your fish will be in even more stressed and shocked.
