i know they are supposed to go like rabbits, but are they picky about their partner or will any one male and female from the pet store work? and once i have them how long until i know if they will be a breeding pair or not?

For the most part, convicts don't really care who their partners are, as long as you have one male and one female. Mine started to breed for me at about 1.5 inches. However I hear that if they start too young, their growth is stunted. I think this is true as their babies are catching up to them in size already, and you can still tell they're babies.

and if you cant find one of the opposite sex, just stick your hand in the tank . They will gladly mate with it.. :D
