I purchased two bunches of Bacopa a while back, from two different stores. They were both labeled Bacopa caroliniana. I planted one on the left side of the tank, and the other on the right.
They both seem to be doing very well, growing like crazy, but now that they're well established they look quite different from one another. The stems on the left have the usual light green, ~1/3 - 1/2" leaves I expected, but those on the right are developing slightly larger leaves (varying from ~1/2 - 1", same exact shape as the other plant) and the leaves are turning red(ish). Both plants are in the exact same conditions and neither is shaded.
I'm curious if there are two different species of Bacopa that are sold as B. caroliniana - one red and one green. Anyone know?

You bet. I don't know the sci name off the top of my head, but a guy named "Lowcoaster" on Aquabid usually has some. Here's an image (not like you need it, but hey...:D)

Hmm, interesting! So at least I know there's a red Bacopa out there. Mine is red-veined, not vibrant red like that picture (though it's still fairly new in the tank, so maybe with time it will redden even more). Thanks for posting that, I'll have do do some digging :D

Found this in a book:
'Bacopa caroliniana Giant Red Bacopa - A water-loving bog plant that submerges well. The thick fleshy stems bear opposite, oval, pale green leaves that turn a rich coppery red in bright light.'

So... I think I've answered my own question ;)
