Convict Courtship and Firemouth Sexing

Well, my tank cycled and I decided to add 3 convicts (1 male & 2 females)and 3 firemouths (I have no idea how to sex them...any help?). It has been three days. They're all pretty small about 3/4" to 1 1/4". Right away two of the convicts stuck together and are pretty much never apart. The third convict, which was a little bit smaller, is *missing* as of this morning, hmmmm. Any way, how can one tell if a pair has truly *paired* off? How long does this normally take? What kind of behaviour am I looking for? So far I can't tell much about the firemouths...one seems to be a little more dominate than the others...especially when eating. The firemouths seem a bit scattered...sometimes they're together, sometimes mixed with the convicts, sometimes by themselves. I expected them tostay near the substrate and lay claim to their own territories in the tank...yet I haven't seen this. They all sort of roam the entire tank, a lot of the time in the middle area. Of the five remaining fish...they all are eating well and seem happy. The convicts seem a bit tougher than the firemouths. Any tips, hints, or info about these fish will be greatly appreciated.
