Any fish that eat dying or dead leaves?

snails would, though
 
Would they eat live plants too?

I've had pond snails but they never bothered any plants.

The best critter to eat old leaves and vegetation is Fresh Water Amphipods (scuds). These guys thrive on that stuff, if you can find them, there are a few sites out there that sells them and once you have a bunch growing in your tank, its also free food for your fish.

They also eat algae in algae scrubbers, which is not good when you are using one to filter your tank. But for eating detrius they are absolutly great. I recomend them to anyone. But they do produce a fair bit of waste although, but I suppose that is like any living creature you put in your tank. :hang:
