Alright... I just want to know everyone's views on these fish:

At the current moment I have a 70gallon tank... inside it I have...

2 dwarf gouramis
4 zebra danios (getting 4-5 more)
4 rasboras (getting 2 more)
1 platy (getting 2 more)
4 mollies (getting 2 more)
1 corycat (getting about 3-4 more)

anyways... this is what I'd love to also add to my tank....

2 angelfish
4-5 rainbowfish
4-6 guppies
4-6 bolivian rams, or german blue rams

Are all of those fish good to keep together?... Also... would the tank be stocked good... or over stocked after all of those fish? And which order should I add the new fish in?

The guppies will eventually be snacks for the angelfishes and I wouldn't be too surprised if they eat the danios either when they get bigger. Otherwise you like fine in terms of stocking/overstocking.

its almost near impossible to sex angel fish by phsycical apperance. Though some people claim they can, its usually not very acurate. The only for sure way to find out is during the egg laying/fertilizing process. Your best bet is to get about 5 of them and let them pair off naturally. Be warned angels are extremely territorial and aggresive towards other fish when breeding.

you can find an LFS or breeder that has a bonded pair but im sure they would be expensive. but just cause you have 2 angels that are the same sex doesnt mean they wont get along. i bought 2 and tho they kind of mess with each other i can tell they like and enjoy each others company.

Then just get any two. Even if you get a pair, and they breed, the other fish will eat the eggs anyway.
