I have a 75 gallon tank that I have yet to setup, and my question is... what all do I need to make it function safely... I'll need a filter, but what kind (canister I'm guessing...but what kind are of the best quality?) I need a heater, but what size would you guys suggest, and..what else do I need? Any ideas? I would love to hear them, thanks for the help guys!

I like the marineland Magnum deluxe 350 w/biowheel, others may disagree but I've had good experience with them. You could try a fluval filter, but I dont know much about them. Get a UV sterilizer as well, they will save you time in the long run.
As for the heater, its better to get two heaters than one large one. For example, opt to get two 150 or 200 watt heaters than one 350 watt heater. That way, if one malfunctions the other one will run fine and will compensate. And if one goes haywire and decides to "cook" your tank, it wont rise as high as if it were a single 350 watt.

We just picked up our three new 75gs today. I'm in the process of setting them up and will be using one Emperor 400 and one Eheim 2026 on each one.

A sump or wet/dry filter works great for some of us who do not do live plants and some who do live plants use sumps. Canister filters are very effective and popular. HOB filters are some of the easiest. I use a combination of an eheim canister filter (the best) and an aquaclear hob.
Oh yeah I feel your pain! I read a thread here recently that a complete rinse was not necessary or particularly good. For obvious reasons I rinse mine.
