From the fish I own it would be
1. Amphilophus citrinellus - Striped Midas
2. Amphilophus sagittae - Black Daemon
3. Amphilophus labiatus - Striped Red Devil
But there are plenty of others that are right up there too.
Of all cichlids, including fish I have never seen in person, my list would include the Grobe Grune (Green Umbie), Hogaboomorum, and "Fat Lips", among many others. There's just so many to choose from.

Actually, Lila, Clown Knifes belong to the family Notopteridae, if memory serves correctly. I know that they don't belong to Cichlidae, and that is the key determination as to whether or not a fish is a Cichlid.

I think that I've seen these before as Blue-Freckled Monsters, but many know them more popularly as the "Umbee" or "Basketmouth Cichlid."

Yeah, it's supposed to be one of the all-time meanest fish ever, much unlike the "Jack Dempsey," which is a fish whose demeanor is much less surly than that of many other cichlids.

I am not that knowledgable about cichlid types, but I am surprised to see so few discus and angelfish votes. Since I only own angels now from the cichlid family, they get my first vote. and nothing beats some of the pictures I have seen of discus for beauty.
Unlike many cichlid fans, I get no kick out of watching a big fish eat a feeder goldfish.
So I guess, with limited experience:
1 - angels
2 - discus
3 - something small, like ram
