My guess is that you are not performing the nitrate test correctly. You have to follow the directions exactly. No way that stock isn't producing nitrates over the course of a week.

The only way in freshwater to have 0 nitrate would be either very heavy planted / lightly stocked with fish OR uncycled tank. Uncycled is unlikely or ammonia would be up. The ammonia and nitrite tests you almost cannot screw up.

IMO, that's a heavy stocking and low amount of WC as well as frequency.....not saying it isn't possible, but unlikely for 0 nitrates before and after a WC unless you are on a heavy continuous drip filtration.
