I believe it says 8 days because that's generally how long a fermentation will last that needs to be heated. There's no reason it can't be used for longer than that. They plug in and are preset to one temperature, so you'd have to try it out and monitor the temp to see how much heat it will actually add to the tub.

I wonder if a heating mat would be powerful enough? I guess they're only good for +10-20F though...
