Sounds like it was dropsy after all. Just to be on the safe side, I'd feed a moist diet from now on. I've seen a lot of bloated bettas fed commercial diets. If you do feed commercial food, it's best to soak it first so it doesn't expand in their gut.
As long as he's eating, it looks like he has a very good chance for a full recovery.
