In a large bowl, toss together:
2 cups of sliced almonds
2 cups old-fashioned oatmeal
1 cup shredded coconut
Stir in:
1/3 cup canola oil
1/2 cup brown sugar
1/2 teaspoon cinnamon
pinch of salt
Spread onto a baking sheet and bake @ 325 degrees, tossing every 5-7 minutes, until golden & fragrant.
Cool and stir in:
1 cup dried cranberries, cherries, chopped apricots, and/or raisins.
Store in an airtight container - can be frozen. Great sprinkled over plain yogurt & fresh fruit, or just eaten out of hand! Perfect for nibbling.
