do you dechlorinate or otherwise treat your water? and if so, what do you use?

Fill the bucket with tap water, add api stress coat and add heater to heat water till same as my tank.

Is Prime available where you are? I'd just adjust the tap to with in finger feel and stop with the heater.

Just had a quick look and couldnt see anything. Will carry on looking and ill try going straight from the tap and stop with the heater. Thanks

If all your water parameters are at 0ppm, and you are doing weekly water changes and dechlorinating the tap water, it sounds like you are not doing anything wrong. If the tank has been set up for a year, and the fish were fine up until a week ago, can you think of anything that might have happened last week? Did something fall into the tank and contaminate the water? Did you possibly put your hands in the tank when you had soap or some other substance on them? Did you recently add new fish that were not quarantined? There are so many possibilities. You have to be Sherlock Holmes. You certainly have a mystery here.
