I used 2 coats of Minwax stain on the outside of our stand, with 2 coats of Minwax polyurethane afterwards. On the inside, where the sump and refugium are, I used 4 coats of exterior latex white paint. I also used multiple coats of the same exterior latex white paint on the inside of our canopy. I've yet to make the outer skin / face boards for the canopy, but they'll be the same stain / poly combination as the stand.

Marine varnish is supposed to be the toughest stuff out there. But it might be overkill.....Minwax poly is probably fine. I would use the floor grade stuff though.
