I always use two, as do most other people. If you are going with the AC filters, I would do two AC 20s or one AC 20 and an AC 30.
others will benefit with the questions you ask here.

I agree..2 first this will allow for redundancy. next it offers the opportunity for better water flow.
having 2 filters also helps minimize 'dead' spots

I use one and I use a bubbler as well. This is for a 25 gallon with 4 adult cories and 2 juvies and some red cherry shrimp and lots of plants. I have a sponge over the outlet and rinse that off frequently and try and do 2 small water changes a week. I don't use the filter cartriges, I use a sponge and lots of filter floss which I rinse out at every water change. I check the impeller every couple of weeks as it gets plants, hair etc...wrapped around it. It's an understocked tank so this works well for me.
Having 2 HOB's also helps keep the bio media in the filter when cartridges are changed. You should always change the filter media on an alternating schedule. so one filter always has established media in it.
true, though it is only necessary to change cartridges when they are falling apart. if they are only dirty, you can swish them around in old tank water to clean them of debris.
I would also use two filters, if one goes wrong you will still have one working filter to keep your tank going.
