Either the five or forty gal, as both noted in my sig. Both are nicely planted, and the frogs are in their permanent home in the five.
Will anybody snack on the adult shrimp? Will they bother anyone?

They'd be in jeopardy in either tank IMO.

Bettas are know to take apart shrimp like legos, but it all depends on the aggresiveness of your betta. Some are peaceful, while others are terrible. As for ADFs, I have 2 in a tank with shrimp and I have never see them snap at the shrimp.

keep in mind, that even full grown, RCS are a tasty bite sized snack!

you could add lots of hiding sots for them and they might be ok for a while, they do swim suprisingly fast!!

lol.. they are soo quick though, my Bee Puffers tried their hardest to get my 2 shrimp and both were way too fast for the puffers. 6 puffers,(had 2 mollies)2- common pelcos and 2 shrimp living like 1 big happy family!
My puffers really aren't as aggresive as I was once told! I bought the shrimp for food now they are family! I guess it all depends on the tank!
