He says I shouldn't do water changes except for once a month because it messes up the ph. So what do I do now?

Keep doing your normal tank maintenance.
I do weekly changes on all my tanks and some tanks twice aper week.
you are far more likely to have a stable pH(like that matters all that much) with weekly water changes.
if you wait for 1X per month you will have a build up of waste in your tank(TDS) and you could actually cause the pH to crash.

The more you do water changes the better your tank water matches the PH of the tap. If there is a significant difference there is either C02 gassing off or it's been too long since the last water change. Cleaner water AND water that matches the tap; can't beat that.
That is exactly what I said and he gave me this convoluted explanation that ended with "because I said so". So I thought I would ask the experts. Thank you so much!
