What is your favorite holiday cookie/treat?

Buckeye's, easily my favorite holiday treat. (Maybe not a holiday treat, but My Grandma always made a bunch around Christmas.)


Ingredients


  • 1 1/2 cups peanut butter
  • 1 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 6 cups confectioners' sugar
  • 4 cups semisweet chocolate chips

Directions


  1. In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  2. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  3. Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  4. Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.
 
mmmmmmmmmm I made something that has the same ingredients except it also had graham cracker powder adn they are SLAMMIN'!
 
Apple crumb pie, I've been making this for 30+ years. It was a recipe from a friends mom. With a scoop of vanilla icecream it's heaven!I'm giving you the original recipe, I do change up the apples sometimes, you can use blueberries too.


3lbs. Rome apples
1/2 cup water
1/3 cup sugar
1 tsp. lemon juice
Mix together in pot and cook till half soft, let cool

Crust
2 cups flour
1 cup sugar
1-1/4 tsp. baking powder
2 egg yolks
1 tsp. vanilla
1-1/2 stick butter(sweet butter)
Mix dry ingredients together. Then add egg yolks and vanilla. Mix with finger tips untill crumbly, like small grains of rice. Then break in butter and crumble with finger tips. I usually cut tablespoons and let the butter soften for a little bit, you don't want the butter mushy. Reserve a cup for the topping. In a deep dish 9" pie plate or a square baking dish press in the crumbs to form a crust, add your apples and sprinkle the crumbs on top. Bake @ 350 degrees till golden brown and bubbly.

oops forgot, peel and slice the apples, my friend put WHOLE apples in the pot once...then again she can't boil water!
