I would go with the darkest blue background you can find. The reason I would not go with black is, because if you get a black fish, or a very dark gray fish, they dont stand out with a black background. I read somewhere else for discus to use a white background.

The shrimps I've seen my snail get ahold of were unsuspecting. I dont think they thought the snail would harm them, so they didn't move. Down to 1 ghost shrimp. No more shrimps with the snail in the tank. Maybe I'll get a seperate shrimp tank.

You could put 1 snail in the 2.5 gallon tank. That's it.
