I think pearl gouramis or blue gouramis will work. Do mind of male blue gouramis. Some can get nippy with their own kind like mine does. But overall its easy to take care.

Don't worry,there is no too big a tank for fishes... The bigger the better. But look out for how strong the filter intake is though...

For me I think dosing Ferts is a must to take care of plants as they do need some form of nutrition other than form of Nitrates and PO4 from the fishes... About CO2 I don't dose it...Might wanna ask Bob on plants maybe...

Aww dang you shouldn't have cleaned the filter media under tap water but still there is still some good amount of bacteria living on the tank.
